Ingredients :
- 404 grams Celeriac peeled & cubed
- 380 grams carrots peeled & cubed
- 111 grams red onion peeled & sliced
- 800 ml cold water
- 1 knorr veg cube or equiv to 5 cals
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 bit black pepper
- 150 ml blue dragon reduced fat coconut milk
Method :
- Add vegetables to a pan or slow cooker. I used an 8 in 1 and set at 140°
- Pour on water, crumble stock cube & add spices. Stir, lid and cook on medium for about 30+ minutes until veg is soft.
- When veg is soft use a stick blender being careful & blend until smooth.
- Add coconut milk & blend in.
- Divide into dishes or put into containers, cool, lid and keep in the fridge for 4-5 days.
