Recipe Prosciutto wrapped mahimahi

Ingredients :

  • 4 skinless mahimahi filets
  • 4 very thin slices prosciutto
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 12 small fresh sage leaves
  • 2 tsp sherry

Method :
  1. Preheat oven to 425°F
  2. Wrap each filet with a slice of prosciutto
  3. Heat a large ovenproof skillet over medium high heat until very hot. Add oil to pan, swirl to coat. Add fish, top side down.
  4. Cook 2-3 minutes until prosciutto is lightly browned. Turn and repeat.
  5. Transfer skillet to oven and bake at 425°F for 5 mins
  6. Melt butter in a small skillet over medium heat. Cook for 2 mins until butter begins to brown. Add sage and remove pan from heat. Stir in sherry, and 1/8 tsp each salt and pepper.
  7. Arrange fish on plates, spoon sage and butter sauce over fish, and serve immediately
