
Ingredients :
- 1 1/2 cups cake flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/4 cups milk
- 1 1/2 teaspoons fresh lemon juice
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons butter, melted
- cooked breakfast sausage, about 10 to 12
- FOR SERVING
- as needed, warmed pure maple syrup
Method :
- Preheat oven to 425.spray mini muffin pans with bakers spray
- Combine flout, baking powder,sugar and salt, whisk to blend
- In a large bowl add milk and lemon juice and let sit for 1 minute
- Whisk in egg, butter and vanilla
- Stir in flour mixture until mostly smooth, the batter will be thin don"t be tempted to add more flour, they puff up tender and light in the oven
- Fill mini muffin pans 2/3 full with batter
- Drop a sausage slice in each center
- Bake for 8 to 9 minutes until golden and a toothpick comes out clean
- Let cool in pans 1 to 2 minutes then remive from pans
- Serve with warm maple syrup for dipping
