Ingredients :
- 1 tbsp Olive Oil
- 1 tbsp Butter
- 1 medium Yellow onion
- 1 tsp Cumin
- 1 tbsp Coriander
- 1 each Clove
- 1 lb Ground beef
- 28 oz Canned whole tomatoes
- 32 oz Canned kidney beans
Method :
- Combine butter and olive oil in a sauce pot over medium low.
- Slice onion and add to the pot. Stirring periodically, cook the onion to a very light caramel.
- Meanwhile, heat spices gently in a pan, just until fragrant, then grind finely and stir into caramelized onions to toast gently just before adding ground beef.
- Add ground beef. Stir over medium heat until browned.
- Add canned tomatoes. Simmer gently for about 45 minutes, stirring occasionally.
- Drain and rinse kidney beans and add them to the pot. Simmer for about 15 minutes.
- Season with salt and pepper and serve, ideally with a big chunk of fresh cornbread.
