Ingredients :
- 4 Whole wheat tortillas
- 100 g cottage cheese
- 100 g cauliflower
- 100 g cabbage
- 100 g french beans
- 2 carrots
- to taste red chillies
- 1/2 tsp crumbed black pepper corns
- to taste salt
- 1-2 tsp vinegar
- 3 tbsp oil
- 50 g onion
- 10 g garlic
- 2 tsp chopped coriander
Method :
- Cut cottage cheese into fingers, cauliflower into small flowerets, shred the cabbage, cut beans diagonally and carrots into small fingers.
- For filling take paneer, cauliflower, beans, carrots, red chilly, vinegar and seasoning with 1 tbsp oil and mix well and keep aside for 20 min.
- Heat 2 tbsp oil in a pan and add garlic and onion and saute for a while, take out paneer from the marinated vegetables and keep aside, add all the other vegetables to the pan and stir fry on moderate heat for 1-2 min., or till the vegetables are cooked. Add coriander, paneer and seasoning and cook for a while and take off the heat.
- Take a tortilla and cook it on a griddle till golden. Spread a table spoon of sour cream on the tortilla, then add vegetables and salsa to it and roll it and serve.
