Recipe Vegetable Fajitas

Ingredients :

  • 4 Whole wheat tortillas
  • 100 g cottage cheese
  • 100 g cauliflower
  • 100 g cabbage
  • 100 g french beans
  • 2 carrots
  • to taste red chillies
  • 1/2 tsp crumbed black pepper corns
  • to taste salt
  • 1-2 tsp vinegar
  • 3 tbsp oil
  • 50 g onion
  • 10 g garlic
  • 2 tsp chopped coriander

Method :
  1. Cut cottage cheese into fingers, cauliflower into small flowerets, shred the cabbage, cut beans diagonally and carrots into small fingers.
  2. For filling take paneer, cauliflower, beans, carrots, red chilly, vinegar and seasoning with 1 tbsp oil and mix well and keep aside for 20 min.
  3. Heat 2 tbsp oil in a pan and add garlic and onion and saute for a while, take out paneer from the marinated vegetables and keep aside, add all the other vegetables to the pan and stir fry on moderate heat for 1-2 min., or till the vegetables are cooked. Add coriander, paneer and seasoning and cook for a while and take off the heat.
  4. Take a tortilla and cook it on a griddle till golden. Spread a table spoon of sour cream on the tortilla, then add vegetables and salsa to it and roll it and serve.
