Ingredients :
- 2 tbsp Olive oil or Coconut Oil
- 1/2 c. beer (optional)
- 4 cloves Garlic, minced
- 1 Medium Onion, minced
- 250 g ground beef
- 3 cubes Beef bouillon (optional)
- 250 g spicy sausage
- 1 Red Bell Pepper, chopped
- 1 stalk celery, diced
- 1 c. mushrooms, chopped
- 1 large Garnet Yam, peeled & cut into ½-inch cubes
- 1 (28 oz) can of Fire Roasted Crushed Tomatoes
- 3 cans Black Beans, drained & rinsed (or 4 cups freshly cooked)
- Zest and juice of 1 lime
- 2 teaspoons sea salt
- 1 green chile pepper, deseeded, diced
- 1 tablespoon each cumin, chili powder, oregano, cayenne pepper/hot sauce, worcestershire
- 1 teaspoon each Cocoa Powder, basil, black pepper, paprika, sugar
Method :
- In large pot, heat oil over medium heat and sauté garlic, onion, with crumbled ground beef and sausage. Add bell peppers, celery, mushrooms & sea salt, saute until soft (about 4-5 min). Add the seasonings and stir to combine. Cook for another minute. Add chopped sweet potato & lime zest, cooking about 10 minutes more, stirring occasionally. Add the tomatoes, black beans, lime juice and any additional seasonings (beer, beef bouillon, water, chiles, etc). Bring to a simmer, cover and cook for about 10 minutes, or until potatoes are soft.
