Ingredients :
- soup
- 5 cup frozen peas
- 3 cup water
- 2 garlic cloves, chopped
- 1 onion, chopped
- 1/2 cup cream
- 4 tbsp olive oil
- 1 grated parmesan cheese
- packages grated mozzarella cheese
- 4 tbsp fresh basil (chopped)
- 2 tsp salt
Method :
- Heat oil. Add onion & garlic. Fry for 5 minutes or until onion is done.
- Add peas, basil, salt. Let the peas defrost in the pot, stirring occasionally.
- Add water.
- After 20/30 minutes (peas should be cooked) use an immersion blender until pureed.
- Add cream.
- Add some grated mozzarella and stir. It should melt.
- Serve immediately adding some more mozzarella, parmesan & pepper.
- Serve with some bruchetta.
