Ingredients :
- 2 kg Chicken pieces
- 3 litres homemade Chicken stock
- 75 gram Rice flour
- 75 gram breadcrumb
- 2 tsp dried Mixed Herbs
- 1/2 tsp Chilli flakes
- 1/2 tsp Chilli powder
- 1 tsp ground Cumin
- 1 tsp smoked Paprika
- 1.5 tsp Garlic powder
- 1 tsp Onion powder
- Dash Hot sauce
- Dash Harissa
Method :
- Bring chicken stock to the boil
- Place chicken bits in the stock turn to medium low and leave to simmer for 2 hours
- Combine rice flour, breadcrumbs and spices
- Strain chicken and roll chicken in crumb mix
- Deep fry for 3 minutes or oven bake with a dollop of butter at 180C for 15 minutes.
