Ingredients :
- 2 lb Boneless, skinless Chicken Breast
- 8 T Pesto
- 2 Roma Tomatoes
- 2 C Mozzarella Cheese
Method :
- Trim and pound chicken and lay on pan
- Spread pesto on chicken pieces evenly
- Slice tomatoes and lay 2 slices on each chicken piece
- Sprinkle cheese evenly over top of chicken breasts
- Bake at 400F for 35 min (until chicken is done)
- Serve over zucchini spaghetti in pesto sauce
