
Ingredients :
- 400 grams Topped green beans
- 1 Punnet cherry tomatoes
- 1/2 Spanish onion, finely sliced
- 1 Juice of 1/2 a lemon
- 1/2 cup Olive oil
- 1 Garlic salt & cracked black pepper
Method :
- Blanch beans in boiling water for 2 minutes. Remove, strain and throw in cold water to refresh (and keep that lovely green colour). Meanwhile- you have baked cherry tomatoes for 5 to 10 minutes at 180*C. Remove and refresh. Throw beans, tomatoes, onion, olive oil, lemon juice and seasoning in a bowl. Gently toss and serve. Delicious fresh, sweet salad. I love it- enjoy!
