
Ingredients :
- 2 tbsp Olive Oil
- 2 shallots chopped small
- 4 cloves Crushed Garlic
- 400 grams Button Mushrooms cut in half
- 150 grams Chorizo
- 500 grams Chicken pieces or leftover cooked Chicken cooked
- 3 tbsp Brandy
- to taste Salt & Pepper
- 1/4 cup Chicken stock made with cube/bouillon in water
- 4 tbsp Double cream
Method :
- Ingredients
- Heatup the oil in a large frying pan.
- Add the shallots and fry for 1 minute then add the crushed garlic for another minute.
- Add the mushrooms and mix well cook for 2 minutes. You may need to add 2 more tablespoons of olive oil.
- Add the chorizo to the pan and mix cook for 2 minutes.
- Add the chicken pieces and mix well and cook for two minutes. If using uncooked chicken fry for about 8-10 minutes.
- Make a well in the middle, turn the heat full for a few seconds and pour the brandy in the middle. Let it boil fast for 2 mins then mix it all together.
- Then add the stock and stir and simmer for 5 mins.
- It should thicken, add the cream and stir in well. Add the salt & pepper until its hot again. Add to a serving dish and serve immediately.
