Ingredients :
- 6-8 oz lobster
- 12 shrimp
- 12 scallops
- 1/2 onion finely diced
- 4 stems of parsley chopped
- 3 cloves garlic chopped
- 1/2 bell pepper
- 1/2 tomato
- 1 tsp paprika
- pepper
- cumin
- salt
- 2 tbsp butter
- 1/2 lemon, juiced
- 6-8 sheets filo dough
- 4 olives flattened
Method :
- Heat butter in a pan, add onion and garlic and saute til golden brown.
- Add shrimp and scallops and the lobster. Cook briefly then remove just the seafood leaving the sauce
- Add in bell pepper, tomato, parsley and spices. Cook briefly then add seafood back in.
- Pour mixture into a colander to drain all the liquid.
- Squeeze lemon juice over the top
- Preheat oven to 350°F
- Take a sheet of filo dough butter one half and fold it over. Place in a greased skillet so that the edges hang over
- Add another sheet two sheets of folded buttered filo dough.
- Spoon half the seafood and vegetables into middle
- Add another filo dough sheet buttered folded in half
- Add the rest of the seafood, and fold filo dough over the top
- Brush with butter and bake for 20-25 min until golden brown
