
Ingredients :
- 1 dozen eggs, preferably from pasture raised chickens
Method :
- Get yourself a dozen eggs from (hopefully) happy, grass eating chickens.
- Bring a big pot of water to a simmer.
- Once your water is simmering, carefully put the eggs in the water. I use a slotted spoon or tongs. Make sure the water is only simmering and not boiling. If the water boils too aggressively, your eggs may crack.
- Let your eggs cook for 13 minutes.
- After 13 minutes is up, move your eggs from the hot water to a bowl of cold water. Let the eggs cool completely before you transfer to the fridge.
