Ingredients :
- 1 box Garden Rotini
- 4 Tbsp. Extra virgin olive oil
- 1 shallot or small onion chopped
- 1 bunch asparagus, sliced
- 1 pint cherry tomatoes
- 10 basil leaves, torn or dried
- 1/2 cup Parmesan cheese, grated
- to taste salt and black pepper
Method :
- Meanwhile, in a skillet, saute the shallot in olive oil over medium heat until translucent - about 2 minutes
- Next, turn the heat to high and add the asparagus and tomatoes, Saute for 2 minutes, then season with salt/pepper. (I added some sliced black olives to salad)
- Cook the pasta according to package directions, then drain and toss with veggies.
- Stir in the cheese and basil.
