Ingredients :
- 1 tbsp olive oil
- 2 tsp curry powder (I use sweet from Penzeys)
- 1/4 cup minced red onion or shallots
- 1/3 cup mayonnaise
- 1 tbsp vinegar
- 1/4 tsp cayenne (or to taste)
- 1 tsp Dijon style mustard
- 2 to 3 tablespoons sweet ginger bits (I get these at Penzeys Spices)
- 1/4 to 1/2 teaspoon salt
Method :
- Heat olive oil over medium heat.
- Add curry powder and cook for 2 minutes.
- In a bowl, mix together red onions or shallots, ginger bits, mayonnaise, vinegar, mustard, salt, and cayenne.
- Add the curry paste to the mayonnaise mixture and mix well.
- *Add 1 to 2 cups tuna or cooked chicken and some chopped pecans to taste and you have a great salad to place on sandwiches.*
