Ingredients :
- 9 oz Mexican Chorizo you can use store bought or fresh from a meat department or deli that sells it
- 8 eggs
- 1/2 onion diced
- 1/2 tomato diced
- 1/2 bell pepper sliced or diced (optional)
- 1 pinch salt and a pinch of pepper
Method :
- First on medium high you cook the chorizo breaking it apart until it"s all in small pieces and until it"s throughly cooked about 12-15mins or so or until it starts crisping up but you don"t want it to burn but yes with a crisp
- Once the chorizo is cooked you break and add the eggs and salt and pepper mix slightly don"t overly mix let the eggs cook and mix well with the chorizo once you see the eggs are cooked add the onion,tomatoes and bell peppers mix well and let it cook for about 5 more minutes or until the veggies are slightly soft and just enjoy with corn or flour tortillas
