
Ingredients :
- 1 large, ripe mango - around 500g
- 300 ml coconut cream
- to taste icing sugar / powdered sugar
- lime zest to garnish
Method :
- Peel and stone the mango and put the flesh into a blender
- Puree smooth, adding sugar to sweeten if the mango is too tart
- Whip the coconut cream until peaking
- Put 2 tbsp of the puree at the bottom of each serving glass
- Mix the remaining mango puree into the cream
- Spoon on top of the puree
- Garnish with lime zest
