Recipe Vickys Mango Fool

Resep Vickys Mango Fool

Ingredients :

  • 1 large, ripe mango - around 500g
  • 300 ml coconut cream
  • to taste icing sugar / powdered sugar
  • lime zest to garnish

Method :
  1. Peel and stone the mango and put the flesh into a blender
  2. Puree smooth, adding sugar to sweeten if the mango is too tart
  3. Whip the coconut cream until peaking
  4. Put 2 tbsp of the puree at the bottom of each serving glass
  5. Mix the remaining mango puree into the cream
  6. Spoon on top of the puree
  7. Garnish with lime zest
