Ingredients :
- 60 g butter / sunflower spread
- 140 g brown sugar
- 4 tbsp rum or the equivalent in rum extract
- 1 tbsp vanilla extract
- 1/2 tsp ground cinnamon
- 4 bananas, peeled and halved lengthwise, then cut in half widthwise
- 1 handful chopped walnuts or pecans (optional)
- ice cream to serve
Method :
- Melt the butter in a frying pan and add the sugar, rum, vanilla and cinnamon
- Stir until the sugar has dissolved and the mixture begins to simmer
- Add the bananas and nuts and cook for 2 minutes, coating the bananas in the sauce until they soften
- Serve immediately with ice cream. I like it with my soft serve pineapple recipe / Dole Whip
