Ingredients :
- 1 red onion
- as required red wine vinegar 🍷
- 4 black peppercorns
- 4 allspice berries
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
Method :
- Cut the onion into 6mm (approx. ¼ inch) slices
- Scald off a jar of at least 500ml (1 pint) and add the onion. Pour in the sugar, vinegar, peppercorns, and salt mixture
- Top up with enough red wine vinegar to cover, and close. Allow to sit at room-temperature for at least 30 minutes before using
- The longer it"s left, the better it will taste. They should last for at least a couple of weeks in the refrigerator
