Ingredients :
- 1 lb beef roast or pork roast
- 3 clove garlic, crushed
- 1 onion, chopped
- 1 large carrot, peeled and chopped
- 2 large tomatos, seeded
- 2 chopped peppers, jalepeno serrano.. your choice
- 3 tbsp chili powder
- 3 tsp salt
- 1 tbsp cumin
- 1 1/2 tsp dried oregano
- 1 1/2 tsp coarse ground pepper
- 1 beef stock
Method :
- add all ingredients to a large stock pot, use enough stock to cover the meat
- bring to boil, then simmer 2 hours until beef falls apart
- remove the beef and shred with a fork
- drizzle shredded beef with stock juices until desired moistness achieved, salt and pepper to taste
- * remaining stock juices can be frozen for future use as soup base
