Ingredients :
- 1 lb broccoli rabe trimmed to 1 inch pieces
- 12 oz penne
- salt and pepper
- 4 oz sweet Italian sausage cut into 1/2 in slices
- 2 shallots finely chopped
- 2 cloves garlic minced
- 1/4 cup parmesian
Method :
- Cook broccoli rabe in boiling water until just tender, 4 to 5 min
- Rinse rabe with cold water and set aside
- Cook pasta until aldente
- Cook sausage in a skillet
- Add shallots and garlic to pan cook until tender
- Take 1 1/2 cups of pasta water and add to skillet heat to boiling
- Drain pasta and add to the skillet. Stir in rabe, parmesan and salt and pepper. Serve
