
Ingredients :
- 1 breast of chicken
- to taste Seasoning for chicken
- to taste Salt
- to taste Pepper
- Rosemary
- Oregano
- 1 spoon olive oil
- 1 spoon butter
- 1/2 Onion
- 200 g rice
- 200 g blueberries
- 1 spoon balsamic vinegar
- 1 spoon maple syrup
Method :
- Put olive oil and butter in a pan. Add the seasonings for chicken to taste with salt & pepper, and cook chicken on each side for 3-4 mins. Take it off the pan, place it into the oven in 200 Celsius and leave it for 10 mins.
- Boil the rice for 10 mins, wash away the extra water and add a spoon of olive oil, rosemary and oregano.
- In the small pan that we had the chicken before, put the onion and saute it. aAter 2-3 mins pour the washed blueberries inside and slow cook it for 5 mins. Also put in 1 spoon of balsamic vinegar and maple syrup and mix
- After 10 mins, open the oven and put the blueberry sauce on top of the chicken and bake 5 more minutes. Take it out of the oven and put the chicken on top of the rice. Enjoy.
