
Ingredients :
- 1/2 cup Italian dressing
- 1/2 tsp crushed garlic
- 1/4 tsp red pepper flakes
- 12 oz boneless chicken , cut into 1 inch cubes
- 2 tsp olive oil
- 1 cup chopped green bell pepper
- 3/4 cup onion, chopped
- 3/4 tsp oregano
- 1/4 tsp black pepper fresh ground
- 1/4 tsp cumin
- 2 cup cooked black beans , drained and rinsed
- 2 cup no salt added canned tomatoes
- 1/4 cup chopped cilantro
Method :
- Combine dressing , garlic ,and red pepper.
- Place chicken in large glass bowl , pour dressing over chicken , cover and refrigerate 30, to 60 minutes or overnight.
- Remove chicken from marinade, drain well, and discard marinade .
- Heat oil in a large skillet on medium - high heat until hot .
- Add chicken , cook 5 to 7 minutes, stirring until chicken is lightly Brown, spooning off any excess liquid.
- Add bell pepper, onion ,oregano, pepper and cumin. Cook stirring 4to 5 minutes or until vegetables are tender. Add black beans and tomato. Cook 2 or 3 minutes more or until thoroughly heated. Garnish with cilantro; serve immediately.
