Ingredients :
- 2 lb Shrimp, peeled and deveined
- Marinade
- 1/4 cup Tequila
- 1/4 cup Lime juice
- 1/2 cup Olive Oil
- 2 tbsp Cilantro, chopped
- 1 Scallion, chopped (white and green)
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Chili Powder
- 2 Garlic Cloves, crushed
- After Marination
- 1/2 tsp Crushed Red Pepper
- 1/2 tsp Salt
- 1 as needed Olive Oil
Method :
- Mix marinade ingredients.
- Combine shrimp and marinade in resealable plastic bag. Squish to distribute marinade.
- Let sit 1-4 hours. If marinading more than an hour, refrigerate.
- Skewer shrimp and put in a rack in the refrigerator to dry for 30 mins.
- Remove 30 mins before grilling to come to room temperature.
- Sprinkle with salt and crushed red pepper and lightly coat with olive oil.
- Grill over hot coals for 6 mins or until pink and kissed by flames.
- Serve with limes and coronas!
