Ingredients :
- 1 teaspoon black peppercorns
- 1 teaspoon cumin seeds
- 1 teaspoon white mustard seeds
- 2 teaspoon paprika
- 1 teaspoon chilli powder or cayenne pepper
- 1 teaspoon dried oregano
- 2 teaspoon dried thyme
- 1 teaspoon salt
- 2 garlic cloves
- 1 onion, sliced
Method :
- Deep fry or roast the peppercorns, cumin and mustard seeds over a medium heat to release their flavours.
- Grind the roasted spices to a fine powder, then add the paprika, Chile or cayenne, oregano, thyme and salt and grind again
- If it is to be used immediately, add the spices to the finely chopped garlic and onion in a blender or food processor and process until well combined
