Ingredients :
- 1 1/2 cup white rice
- 2 cup chicken broth
- 1 1/2 cup salsa
- 3 tbsp onion minced
- olive oil, extra virgin
Method :
- Saute onions in a pan that can fit a lid on it. Add rice to the pan and cook until a golden brown. About 7-10 minutes. Then add chicken broth and salsa. Stir to mix. Bring to a boil and cover. Simmer for 20 minutes or so. Fluff with fork .
- You can also use green salsa if you wanted to instead of red salsa
