
Ingredients :
- 3 chicken breasts (filleted & sliced)
- 1/2 green bell pepper; sliced & seeds out
- 1/2 red bell pepper; sliced & seeds out
- 1/2 orange bell pepper; sliced & seeds out
- 1/2 medium yellow onion; sliced
- 2 tsp minced garlic
- 2 tsp ground cumin
- to taste salt & pepper
- 1/2 cup lime juice
- 1 envelope fajita seasoning mix
- 2 tsp chili powder
- 2 tbsp vegetable oil
- flour tortillas
Method :
- Slice chicken breasts & veggies. In large skillet add oil & heat to medium high heat. Add chicken to skillet, cook until no longer pink. Add peppers, garlic & onion. Toss & cook until veggies are tender.
- Add lime juice & seasonings, toss until there is little to no juices in the bottom of the skillet.
- Serve with a hot flour tortilla. Great sides to go with your fajitas would be refried beans, spanish rice or you could have Mexican street corn like I did in my photo. Enjoy😆
