Ingredients :
- 1/2 cup Fat-free Mayo
- 1 tbsp minced Onion
- 1 lb eggplant, unpeeled, (sliced - 1/2 in)
- 1/3 cup dry breadcrumbs (fine)
- 1/3 cup grated parmesan cheese
- 1 tsp italian herbs
Method :
- Combine mayo and onion, and spread onto both sides of eggplant
- Combine dry ingredients, and spread on both sides of eggplant
- Pre-heat oven at 420 F, bake for 25 minutes (flipping eggplant in between.
