Ingredients :
- 4 Cans sweet corn (15.25 ounces each)
- 1 red bell pepper, diced
- 1 green bell pepper or poblano, diced
- Juice and zest of one lime
- 1 red onion, diced
- 1/2 bunch cilantro, chopped
- to taste salt and pepper
- 1 bag Chili Cheese Fritos 9 ounces
- 2 cups shredded cheese Mexican blend or cheddar
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 teaspoon cayenne pepper or chipotle pepper
Method :
- In large bowl combine all four cans of corn drained. Add diced red and green bell pepper, chopped cilantro, zest of one lime and juice, diced red onion, cayenne pepper, mayo and sour cream and cheese.
- Refrigerate 30 to 60 minutes. Add Fritos right before serving.
