Ingredients :
- Olive Oil
- 6 boneless, skinless chicken boobs (aka breasts), sliced in half horizontally
- 4 cups tomato-basil or marinara sauce
- 1 cup coarsely chopped yellow onion
- 1 cup coarsely chopped green bell peppers (I think these things are disgusting, but my wife likes them and I like her kissing my ring)
- 1 can (6 oz) sliced mushrooms, drained (optional because mushrooms are nasty)
- 1/4 cup dry red wine (optional but it definitely adds to the flavor)
- 2 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons salt
- 2 teaspoons black pepper
Method :
- Heat oil in a skillet over medium heat. Brown chicken on both sides. Drain and transfer to your favorite slow cooker. BE SURE to cook on low. This isnt the time to be reinventing the wheel. I know from experience. I botched this the first time I did it because I cooked on high.
- Add remaining ingredients and stir well to combine. Or don"t; some people don"t care for well-balanced flavors.
- Cover; cook on low for 5-7 hours on low (5 hours is probably plenty) or 2 to 3 hours on high.
