Ingredients :
- 1 kg Medium sized zucchini
- FOR CHICKEN:
- 1 Sweet pepper
- 1 Onion
- to taste Seasoning of your choice
- 500 grams Chicken breasts
- FOR BECHAMEL SAUCE:
- 75 grams Butter/ margarine
- 75 grams Flour
- 900 ml Milk
- to taste Again seasoning of your choice in the sauce
- FOR PASTA:
- 250 grams Your favourite pasta
- 1 pinch Salt
Method :
- Cut the chicken breasts into small pieces. Heat 1 tbsp of olive oil in a pan and place the chicken in it!
- Add in any seasoning that you like in the chicken
- Cut the pepper into cubes and add to the chicken and stir until chicken is fully cooked and then set aside
- Boil the pasta with a pinch of salt.... Drain and set aside.
- For the zucchini:
- Slice the zucchini longitudinally.
- In a large pan (use the largest that you have) place in the zucchini and add water so it just covers the top of it
- Add a pinch of salt and leave to boil for about 4-6 mins depending on how large the pan u used is. When cooked... Drain and set aside until the end
- For the bachamel sauce:
- Melt the butter on medium heat
- Gradually add the flour as soon as the butter melted and stir
- Add in the milk a bit at a time mixing continuously and stir until the sauce reaches the thickness you want
- Add in any seasoning u like
- For the finish:
- Pre heat you oven to 200 C degrees
- In a large rectangular tin... Add a very thin layer of the bachamel sauce and the bottom so the zucchini doesn"t stick
- Layer the zucchini on top
- Then cover with a very thin layer of sauce
- Mix the pasta and chicken together and add them on top of the zucchini
- Again cover with a really thin layer of sauce and layer the last bit of zucchini on top
- With the remaining bachamel sauce cover the top for the zucchini completely
- If you like cheese... Use 6 thinly sliced cheese on top
- Place in the pre heated oven for 30 mins or until golden brown on top
- Meanwhile its cooking, u can make ur favourite salad to serve with it
- And when it"s done it should look something like this
