Recipe Salted Caramel Cheesecake

Ingredients :

  • 1 pkg Oreos, family size or chocolate crumbs
  • 7 Tbsp butter
  • 3 packs cream cheese
  • 1 c brown sugar
  • 3 eggs
  • 3/4 c heavy cream
  • 1/4 c caramel syrup or 2 Tbsp caramel flavor
  • 1/2 c butter
  • 1 1/4 c brown sugar
  • 2 Tbsp caramel syrup or 1 Tbsp caramel flavor
  • 1/2 c heavy cream
  • 1 1/2 tsp sea salt
  • 1 c semi sweet chocolate chips
  • 8 oz heavy cream

Method :
  1. Crust: take Oreos apart, scrap filling out and discard. Finely crush cookies
  2. Melt butter and add to oreo crumbs. When well mixed, put crust mix in springform pan. Press evenly on bottom amd 1/2" up sides
  3. Cheesecake:
  4. Put cream cheese and brown sugar in mixer and cream until well blended and fluffy.
  5. Add eggs, 1 at a time, making sure they are blended well
  6. Add in cream and caramel. Mix well.
  7. Pour in pan and bake at 350 until sides are set. Middle will be slightly soft. Remove from oven and cool
  8. Caramel layer:
  9. Put butter, brown sugar and caramel in saucepan.
  10. Stir over medium heat until sugar is dissolved. Continue to cook until mixture comes to a boil. Boil for 2 minutes.
  11. Remove from heat. Whisk in cream and sea salt. Mix very well. Set aside
  12. Ganache:
  13. Put chocolate chips in bowl. Place bowl over sauce pan with water. Bring water to boil.
  14. Add cream and stir until chips are all melted.
  15. Assembly:
  16. When cheesecake is cooled, add caramel topping and spread evenly.
  17. When caramel topping has cooled slightly, pour ganache over topping and spread evenly.
  18. Let cheesecake cool completely and chill. Remove from pan and cover. Keep in refrigerator until ready to serve.
