Ingredients :
- 6 slices bacon
- 2 lbs potatoes
- 3 tbsp vegetable oil
- 1/2 tsp garlic salt
- 1/8 tsp black pepper
- 1/4 cup barbecue sauce (any flavor)
- 1 cup shredded colby jack cheese
- 4 tsp dried parsley
Method :
- Bake bacon in 400 degree oven for 22 minutes, until brown & crisp. Drain well. Crumble.
- Increase oven temperature to 450 degrees.
- Cut potatoes into 1/4 inch slices. Put in bowl or gallon ziploc bag. Add oil, garlic salt, & pepper. Stir or shake until well coated.
- Arrange potatoes in single layer on baking sheets. Bake for 20 minutes or until lightly browned.
- Brush with barbecue sauce.
- Mix bacon, cheese, & parsley in bowl. Add some of mixture on top of each slice.
- Bake until cheese melts, about 5 minutes. Then serve.
