
Ingredients :
- 1000 grams chopped plums
- 250 grams golden caster sugar
- 1 vanilla pod, halved and the seeds scraped out
- 1 cinnamon stick
- 225 ml water
Method :
- Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved
- Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened
- Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick
- Stir the plums back into the syrup and serve with some plain yogurt
- You can also use this to replace the cherries in my brûleè recipe
- This makes around 12 servings and can be frozen
