
Ingredients :
- for the filling
- 4 tbsp salted butter
- 4 halves of crisp apple or pear, cored , peeled or unpeeled
- 4 small slices of soft goats cheese, or use a blue cheese either crumble it or use small slices
- 2 cloves of fresh smoked garlic
- 4 chives cut into small pieces
- fresh cracked black pepper
- for the omelette
- 8 medium fresh eggs
- 8 tsp cold fresh water
- 4 tablespoons of butter
- fresh cracked black pepper
Method :
- You can keep the the filling raw or cook it, the choice is yours. If you cook it melt the butter in a pan and cook the apple or pear over low heat until just heated through. Remove from heat set aside . If you do use the fruit raw then you won"t need the butter for filling.
- To make the omelette, melt a tablespoon of butter for each of the four omelette separately, add 1/4 chopped garlic to the melted butter for each omelette.
- Mix 2 teaspoons of water with 2 eggs and whisk thoroughly , add some cracked pepper to the egg mix. Add another 1/4 of garlic to this mix
- Heat a pan, pour the egg mix into the hot pan and pull the sides of the omelette with a fork into the middle until the egg mixture has thickened and almost all the moisture is gone and the omelette is almost set.
- Now , whilst still in pan ,top half of the omelette with apples or pears, cheese of choice , chives and more cracked pepper , fold over and slide carefully out of pan , serve straight away and enjoy.
