Ingredients :
- 1 lb chicken breast tenders
- 1 medium onion, chopped
- 1 dash basil
- 1 tsp sea salt
- 1 box bow tie noodles
- 1 can 10 Oz tomatoes with green chile pepper
- 1/2 can Progresso light chicken and cheese enchilada soup
- 1 can whole kernel corn
- 15 oz can of black beans
- 1 tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1/2 tsp crushed red pepper
- 2 cup shredded cheese
Method :
- Boil chicken, onion, basil, and salt until chicken is done.
- Remove chicken from water, set to side. Save broth.
- Add noodle to the broth, add water if needed to submerge noodles.
- Drain noodles, shred chicken and then add it to the noodles.
- Add soup, tomatoes , spices, corn and black beans. Bring to a boil then let simmer for about 15 minutes stirring occasionally.
- Add cheese and let simmer for 5 more minutes.
