Ingredients :
- 1 medium onion, diced
- 1 tsp olive oil
- 1 lb ground beef
- 29 oz fire roasted diced tomatoes
- 7 oz mexicorn (or plain canned corn) drained
- 15 oz canned black beans, drained
- 15 oz ranch style beans
- 15 oz navy beans (white)
- 10 oz Rotel (your favorite kind)
- 1 envelope taco seasoning
- 1 envelope ranch salad dressing & seasoning mix
- 1 fritos chips for serving
- 1 shredded cheddar cheese for topping
Method :
- Saute onion in olive oil
- Add ground beef, cook until brown and drain
- Add all ingredients and beef mixture to pot.
- Bring to boil, reduce heat and simmer for about 1 hour
- Serve with fritos, topped with cheese
