Ingredients :
- 1 small red onion
- 3 vine tomatoes
- 1 packages baby plum tomatoes
- 1/2 packages fresh coriander
- 1 red or green bell pepper
- 2 fresh limes
- 2 tsp "easy chilli" / fresh red chillies
- 2 clove garlic
- 1 tbsp extra virgin olive oil
- sea salt and black pepper
Method :
- Finely chop the red onion, bell pepper, coriander, tomatoes, chillies, and garlic, and mix together with a fork in a large bowl.
- Finish with plenty of lime juice and, if you like, some extra virgin olive oil. Serve with corn chips, or in tacos, enchiladas, nachos, tortilla wraps, or in other Mexican dishes.
