Ingredients :
- Mung bean & edamame fettucine
- 3 large organic tomatoes
- 4 organic shallots
- 1 clove garlic
- A few fresh basil leaves
Method :
- Bring pot of water to boil for the pasta
- Peel then chop shallots in half then into 4
- Add shallots to a pan with hot oil and salt to fry off
- Dice a clove of garlic and add to shallots in pan
- Halve the tomatoes then chop into slices. Add to the pan
- Reduce heat on the sauce once the shallots are golden brown
- Boil the pasta for 7-8 minutes while the sauce reduces
- Add 1/2 lemon juice to the sauce
- Drain the pasta when cooked and serve with sauce. Sprinkle torn basil leaves and another 1/2 lemon juice over before eating
