Recipe Lentil quinoa broth bowl

Ingredients :

  • 1 cup lentils, washed and soaked in water for 1 hr
  • 1 cup quinoa
  • 1 cup mix of kale and baby spinach leaves
  • 1 tbsp garlic powder or fresh garlic chopped
  • 1/2 cup mushrooms ,sliced
  • 4-5 cups chicken or veg stock
  • 1 lemon , cut into circles
  • olive oil
  • 2-3 red chilles, dried or fresh ones
  • salt
  • 3-4 Tbsp tomato paste

Method :
  1. If you hav a pressure cooker, cook lentils until 2 whistles. Open it and let it cool
  2. If you dont have pressure cooker you can omit the above step
  3. In a wide bottom pan, add oil, fry red chilles, garlic and mushrooms til mushrooms are cooked. Add tomato paste and fry for 2 mins
  4. Add quinoa , lentils and veg or chicken stock to the pan and cook for 5 mins.
  5. Add salt , kale and baby spinach leaves and lemon slices and simmer for 5 mins
  6. Close the pan with a lid and turn off the stove and let flavours soak in.
  7. Serve with fried chicken or egg.
  8. Once the quinoa is cooked, if you want soup watery consistency you can add more stock .
