Ingredients :
- 1 large aubergine eggplant
- 1 large onion
- 5 carrots
- 1 pound boneless pork loin
- 1 teaspoon dark chocolate cocoa powder
- 1 teaspoon ground sage
- 1 teaspoon celery salt
- 1 teaspoon granulated garlic powder
- 1-1/2 teaspoon ground black pepper
- 1-1/2 teaspoon celery salt
- 1 cup water
- 1 cup rice wine
Method :
- In a hot pot add the pork and water
- Dice your eggplant and onion. Chop your carrots. Add to the pot
- Add the spices except 1 teaspoon of celery salt, chocolate and sage
- Add the whole stick of butter on top of meat
- Cover and let melt
- When the butter melts add wine, chocolate, and sage
- Cover and simmer 10 minutes turn over and add the rest of the celery salt, half a teaspoon to the pork simmer 10 minutes
- Turn on side and cook 4 minutes per side. the eggplant should become the sauce it will cook down
- Let sit covered slice and serve I hope you enjoy!
