Ingredients :
- 1 cup shoots
- 1/4 cup red pepper, cubed
- 1/2 a mango, cubed
- 1/2 a nectarine, cubed
- 1/2 a peach, cubed
- 1/2 tsp fresh ginger, chopped
- 1/2 a jalapeño pepper, chopped
- Lemon juice
- Fresh cilantro
- 1 tbsp olive oil
- 2 tofu patties
Method :
- In a mason jar add fruits and jalapeño, ginger, lemon juice and olive oil. Shake well.
- Cook tofu according to package. I simply heat mine up on a stove top.
- On a plate place shoots and red pepper, cooked tofu. Then top with mango salsa and cilantro !
- Oh so tasty!
