Ingredients :
- I. Sweet Potatoes:
- 6 medium sized sweet potatoes
- 1 large diameter sweet potato
- 1/2 cup ghee/clarified butter
- II. For the Filling:
- 1 pound ground sirloin
- 1 pound cauliflower
- 1/2 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon granulated garlic powder
- 1/4 cup parsley
- 1 small onion chopped
- 2 cup extra sharp cheddar cheese, shredded
- III. Green Beans:
- 1 pound whole green beans
- 2 tablespoons ghee
- 1/2 teaspoon salt
- 1/2 teaspoon granulated garlic powder
- 1 (10 inch) spring form pan
Method :
- Preheat oven 400° Fahrenheit
- Cut the sweet potatoes into thin slices, after you wash them and dry them.
- Line the springform pan with sweet potato slices. The sides and bottom. Brush with ghee and sprinkle with salt.
- Chop the onion and cauliflower. Brown the ground sirloin with the onions and cauliflower. Add spices for them. Garlic, paprika, salt, 1/2 teaspoon cayenne pepper, and parsley. Add to top of the bottom layer of sweet potato slices.
- Heat ghee in a pot add green beans, salt and garlic. Cook till tender.
- Add half the cheese to the cauliflower sirloin mixture
- Add green beans to the top of cheese
- Add the rest of rhe cheese to top of beans layering as you go
- Cover with sweet potato slices
- Brush on melted ghee to top layer of sweet potatoes
- Bake in oven covered for 30 minutes. Uncover then uncovered 25-30 minutes more. Let sit 15 minutes serve. Hope you enjoy!
