Ingredients :
- 3 lbs baby artichokes
- 3 T EVOO
- 1/2 t kosher salt
- 1/4 t freshly ground black pepper
- 1/2 c fresh parsley leaves
- 1/2 c toasted walnuts
- 1/2 t Dijon mustard
- 1/2 t kosher salt
- 1/2 t freshly ground black pepper
- 1 clove garlic
- 1 lemon (zested)
- 1 t lemon juice
- 1/4 c EVOO
Method :
- Preheat oven to 300°F.
- To clean artichokes: trim outside green leaves until you reach soft yellow leaves. Cut tops off and trim hard stems. Slice artichokes in half thru stems.
- Arrange artichokes on baking in songle layer with oil, salt, pepper. Roast until tender. 25-30 mins.
- Gremolata: In food processor, add parlsey and walnuts and pulse until finely chopped. Add mustard, salt, pepper, garlic, and lemon zest and juice. While running, slowly add oil and process until smooth.
- Toss gremolata with warm artichokes and serve hot.
