Recipe Roasted Baby Artichokes with Gremolata

Ingredients :

  • 3 lbs baby artichokes
  • 3 T EVOO
  • 1/2 t kosher salt
  • 1/4 t freshly ground black pepper
  • 1/2 c fresh parsley leaves
  • 1/2 c toasted walnuts
  • 1/2 t Dijon mustard
  • 1/2 t kosher salt
  • 1/2 t freshly ground black pepper
  • 1 clove garlic
  • 1 lemon (zested)
  • 1 t lemon juice
  • 1/4 c EVOO

Method :
  1. Preheat oven to 300°F.
  2. To clean artichokes: trim outside green leaves until you reach soft yellow leaves. Cut tops off and trim hard stems. Slice artichokes in half thru stems.
  3. Arrange artichokes on baking in songle layer with oil, salt, pepper. Roast until tender. 25-30 mins.
  4. Gremolata: In food processor, add parlsey and walnuts and pulse until finely chopped. Add mustard, salt, pepper, garlic, and lemon zest and juice. While running, slowly add oil and process until smooth.
  5. Toss gremolata with warm artichokes and serve hot.
