Ingredients :
- 120 grams cooked long grain rice
- 250 grams lean beef mince
- 1 small onion, chopped
- 6 grams spring onions, chopped into thin rings
- 1 1/2 clove crushed garlic
- 1 chilli, chopped or use equivalent qty chilli paste
- 1 tbsp lemon juice
- salt and pepper
- 1 tsp cooking oil or low fat cooking spray
- sauce
- 1 tbsp soy sauce
- 1 tbsp chilli sauce
- topping
- 2 eggs
- 1 tsp cooking oil or low fat cooking spray
Method :
- Heat oil or cooking spray in a wok. Add garlic. Add chilli and onion and fry until fragrant.
- Add beef mince, lemon juice, salt and pepper. Fry until mince is cooked through.
- Meanwhile fry the eggs to your liking.
- Add the rice and the sauce and mix through. Stir in the spring onions and then serve with the fried egg on top.
