Ingredients :
- 1 leg of lamb. (any roast lamb should work) 1-2 kg
- 2 limes (cut in half)
- 3 lemons (cut in half)
- 1 cup beef stock
- 4 onions (cut in half)
- 4 carrots (cut into thirds)
- 1 tablespoon dried thyme
- 1 tablespoon olive oil
- salt (1/2 to 1 tablespoon at a guess)
- 6 large tin foil balls (will use next time due to fluid build up)
- 1 tablespoon dried rosemary (will use next time)
- 2 heads garlic (cut in half) (will use next time)
- Pepper (approx 1/2 teaspoon)
Method :
- Prepare beef stock, pour in slow cooker.
- Next time I cook this, i will use 1 lemon, 1 lime and half a cup of beef stock and cook on low for 8-9 hours.
- *keep eye on fluid levels, it does get high, you may need to drain half of it out once or twice
