Ingredients :
- 1 Amber Squash, it looks like a small pumpkin only as big as a Jaffa Orange
- 3 tbsp Chopped sweet tomato
- 4 tbsp Sweetcorn
- 1/2 tsp Runny honey
- 2 tbsp flesh from the scraped out Squash
Method :
- Cut the stem off the top and 1/2 inch all around
- With a knife cut out the middle of the squash, much like a pumpkin take out all the pips and loose pulp stuff
- Now scrape out as much of the squash as you can and add to the chopped veg and honey mixing bowl. Mix well
- Spoon as much mixture as you can back into the squash and squash down
- You could cut out carefully but not right through a face like a pumpkin. It could be a mini pumpkin on Halloween
- Put the top on and roast in the oven for 30 minutes. Serve hot or cold
