
Ingredients :
- 1 1/3 cup flour of your choice
- 1/2 tsp xanthum gum (if using gluten free flour)
- 1 cup oats, uncooked
- 1/3 cup firmly packed brown sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2/3 cup milk of your choice
- 1/3 cup apple juice
- 1/4 cup vegetable oil
- 1 egg, beaten (or equivalent amount in egg substitute)
- 1 apple, peeled & chopped
Method :
- Heat oven to 400 degrees. Grease muffin tin or line with baking cups.
- Combine dry ingredients in large bowl. Add remaining ingredients, except apple, mixing just until moistened. Gently fold in apples.
- Fill prepared muffin cups 2/3 full.
- Bake 20-22 minutes or until golden brown.
