Ingredients :
- 1/4 cup chopped pecans, almonds, or walnuts
- 2 cup fresh flat-leaf parsley leaves (from 1 large bunch)
- 1/2 small garlic clove
- 1 black pepper (to taste)
- 1/4 tsp salt
- 1/4 cup grated Parmesan cheese
- 1 to 2 teaspoons fresh lemon juice (to taste)
- 1/4 cup extra virgin olive oil
Method :
- Pulse the nuts in a food processor or blender until finely ground.
- Add the parsley, garlic, salt, and a couple of turns of pepper, and pulse until finely chopped.
- Add the Parmesan and pulse to combine.
- With the motor running, drizzle in the oil and blend until combined.
- Transfer to a bowl and stir in the lemon juice.
- *I had this at a friend"s cousin"s house on grilled chicken sandwiches with sliced tomatoes. It was delicious.*
