Recipe Parsley Pesto 2

Ingredients :

  • 1/4 cup chopped pecans, almonds, or walnuts
  • 2 cup fresh flat-leaf parsley leaves (from 1 large bunch)
  • 1/2 small garlic clove
  • 1 black pepper (to taste)
  • 1/4 tsp salt
  • 1/4 cup grated Parmesan cheese
  • 1 to 2 teaspoons fresh lemon juice (to taste)
  • 1/4 cup extra virgin olive oil

Method :
  1. Pulse the nuts in a food processor or blender until finely ground.
  2. Add the parsley, garlic, salt, and a couple of turns of pepper, and pulse until finely chopped.
  3. Add the Parmesan and pulse to combine.
  4. With the motor running, drizzle in the oil and blend until combined.
  5. Transfer to a bowl and stir in the lemon juice.
  6. *I had this at a friend"s cousin"s house on grilled chicken sandwiches with sliced tomatoes. It was delicious.*
  7. **She used pecans, but you can make it with any nut you prefer.**
