Ingredients :
- 2 slices bread
- 3 tsp olive, divided
- 3 cups chopped kale
- 1 tsp minced garlic
- 1/8 tsp salt & 1/8 pepper & 1/8 red pepper flakes
- 2 eggs
- 2 oz feta cheese
Method :
- Toast bread.
- Heat 2 tsp. olive oil in a large skillet over medium. Add the kale, stir to coat, then cook, stirring occassionally until the kale softens (5 mins). Add the garlic, salt, pepper, & red pepper flakes. Stir and cook for 1 more minute. Remove from hear and stir in feta cheese, then cover to keep warm.
- In a small skillet, heat the remaining tsp. of olive oil over medium. Gently crack eggs into skillet and sprinkle with extra salt and pepper. Cook until whites are set but the yolk is still soft.
